There are a huge number of different rice strains in the world, and as we have dabbled over the years in learning about the cooking of a number of different cultures, we have discovered how important it is to stay true to the rice typical to that country. Ferron is imported by Sabato, and comes from the north of Italy and a family that have been processing risotto rice for generations. It doesn’t get any better.
