We use Akaroa salmon, and hot smoke it over oolong tea, orange peel and rice. Gently flavoured and equally good in a salad with a dressing made from Burnt Orange sauce and olive or avocado oil, or reheated as a main with pandan flavoured rice.
Approx Weight: 300gm (enough for 2 main course portions or 4 as an entrée salad.)
