It’s not burnt, but reduced to the point of caramelisation so the flavours are intense, and the texture unctuous. Can be used for sweet or savoury – as the sauce to go with the Chocolate Fondant Pudding, or the Chocoate Brownies, or mixed with a good quality NZ olive or avocado oil and used as a salad dressing. Especially good with confit duck. Fresh.
Volume: 200ml, enough for 6 Chocolate puddings.
Ingredients: Orange juice, sugar
Recommended Cooking Method:
- no heating required - just place a couple of spoonfuls on each plate.
